Revisited Basler Mehlsuppe

We propose a revisited recipe of Basel's signature dish, a hearty, flavorful soup originally from Switzerland traditionally served during the Basel carnival.

50g butter
1 Medium chopped onion
800 ml Vegetable broth or Beef broth
Red wine medium quality wine
120 g Gruyère cheese

Heat the butter in a saucepan, sauté the onions for 2-3 minutes until softened then add the Bsisa flour, sauté with it

Pour in the stock while stirring with the whisk, bring to a boil and simmer for 20 minutes.

Serve with grated Gruyère cheese.

Add a dash of red wine if desired.
