Pizza Bianca with Figs and Blue Cheese

Ingredients
1¾ cups of plain flour
2 tsps. (7 g sachet) dried yeast
1 tsp caster sugar
1 tsp of salt
2 Tbsp of olive oil
300ml of lukewarm water +/- as needed
½ cup of Creme Fraiche or full-fat sour cream
100g blue cheese
4 ripe figs cut into chunks
125g ball good-quality Fresh Mozzarella
2 tbsp good balsamic vinegar(optional)
1 cup fresh Rocket
2 tbsp walnuts
Steps

Mix the flour, Bsisa Soprano, and salt with a wooden spoon - Add the yeast, sugar,mix, then pour in lukewarm water and mix again.

Add the 2 tbs of olive oil and knead the dough for another 5 minutes until it becomes smooth and comes off the container.

Cover with a tea towel and let the dough rise in a warm place until it has doubled in size: minimum duration 1 hour.

Preheat the oven to 220C/200C fan/gas 7; Tip the dough onto a floured surface, knead briefly to smooth, Roll out your dough in the shape of a thin disc

Spread the crème Fraiche and the bleu cheese over the dough and bake for 10-15 mins until crisp at the edges and slightly puffed up

Toss the figs, walnuts, and mozzarella with the rocket. Drizzle with balsamic vinegar over the pizza and serve.
