Bsisa Christmas Gingerbread

Christmas is just around the corner and I know you’ll need this recipe! After all, who does not need an easy eggless flavorous special Christmas Cookies recipe that is quick to make, delicious and super festive! Bsisa Biscoff Cookies recipe is crunchy, buttery, aromatic, and just the right amount of sweet!

1 ½ cup plain flour
1/2 tsp bicarbonate of soda
1/2 tsp baking powder
1/2 tsp salt
1 cup butter, at room temperature
1/4 cup cane sugar
1/4 cup brown sugar
3 tbsp milk or more as needed
1 tsp vanilla extract
1/2 tsp ground cinnamon
130 g of icing or more as needed

In a medium-sized bowl, mix together flour, cinnamon, baking soda, baking powder, and salt.

In a separate large bowl, cream together the butter, sugar, and brown sugar with an electric mixer on low speed. Add in the vanilla extract.

Gradually blend the flour mixture into the butter mixture until it is well combined. The dough may feel dry and crumbly add to it the milk until obtaining a consistent paste.

Bring the dough into a ball, cover, and chill for a minimum of 1 hour.

When the cookie dough is chilling preheat the oven to 180°C then grease and line 2 cookie sheets, set aside.

Flour the work surface well and Roll out dough to 5mm thickness and cut with a shaped cutter. Then carefully transfer to your prepared baking sheet 1 at a time using, an offset spatula (this ensures the cookies keep their shape).

Bake for around 8 minutes until golden and brown. Remove from the oven, cool it on a wire rack and decorate if desired.
